Baked Lemon Doughnuts
2 Cups Self Raising Flour
3/4 Cup Sugar
1/2 Teaspoon Salt
200 ml Buttermilk
2 Tablespoons Canola Oil
2 Eggs
1 Tablespoon Lemon Juice
1/2 Teaspoon Vanilla
Grated Zest of 1 Lemon
6 Tablespoons Butter, melted, for dipping
Instructions:
Preheat oven to 200 c.
Spray 2 x 6 hole non stick Doughnut trays with Spray and Cook.
In a large bowl, mix the flour, salt and sugar together then stir in the rest of the ingredients until just combined.
Evenly divide the batter - should be just over 3/4 full.
Cook for 7 - 9 minutes or until just turning golden and spring back to touch.
Cool in tray for 5 minutes then turn out onto oven rack.
Dip one side of Doughnut in butter then into the lemon sugar.
